The Whole Process of Smell
At the first glimpse of her, there existed nothing but fresh plum and pure crystal sugar. Her acid kept still, and her sugar incense kept passive.
It seemed that time and space had stopped, only with huge meditative inspiration.
However, behind the background bizarrely seeped out a touch of salt.
For a moment, in her canvas was filled with kind of orange taste coming from fresh crispy, more fructose from orange juice.
Then, in her, there emerged features of sweet pear incense and many green melons:
peeled cucumbers meat, white rang of watermelon and fresh Courgettes.
Meanwhile, there also appeared sense of existence of her sugar incense.
Next, in her, raw melon and pure sugar turned into a delicate sugar sweet potato aroma--
It smelled as fresh as boiled peeled yams. It was cooked with neither potato skins nor charcoal burning.
With little miscellaneous flavor, I experienced white sugar and maltose made sugar fragrance.
Furthermore, I encountered some denser turbid odors like boiled fresh milk, light black tea, and a little dry thyme leaves.
However, it was also soft and misty, like mist.
After a while, she spread honey incense arising from flowers and fruits.
The honey smelled light with a little floral fragrance from many light-colored flowers.
It contained sweet fruit characteristics: fresh longyan pulp, white grapes, dried litchi.
It was sweet yet not too over, dense yet not sticky, along with some acerbity of grape stalk, including somewhat imagination of musk grape white wine.
After decanting her, her aroma grew energetic. Her sweet fragrance got awake totally; the sugar fragrance turned active. In Chinese, what was called that jam fragrance concealed herself in the mountains; the flowers smell hided in the valley.
Her heavenly fantasy in her previous fragrance had turned into a memory.
Now here came gentle township of sugar stains made from green plum and flowers honey.
Her melon taste of the previous middle period had gone away, and meanwhile, honey sweet potato had half disappeared.
It was time for her candied fruit style to show: crisp plum preserves, honey and cheerful caramel incense included.
Her molasses was full, yet the acid was distinct, and there came out a large amount of sauce – salty taste.
Her flavor of milk and herb flowing in the bottom grew stronger.
Her smell felt like condensed milk, light cream, and strong milk fat taste;
Herbal aroma resembled the fragrance of boiled black tea, dry thyme and rosemary leaves. By the way, it spread vividly
In a concrete way, this sense could be described as following: milk tea soaked dried fruit of dried longyan and white raisins, and honey taste was just around the corner.
In Chinese, I described such an experience as follows: below the depths of the glens, I was surprised to smell hundreds of flowers. After drinking her, I exclaimed that there really exists a land of milk and honey.
By using the words in Bible, my experience was like to leave the ethereal land, and then stationed in the land of Canaan. To my surprise, heaven should be more than only one spot.
Taste and Aftertaste—Plenty
Sweetiness & Acidity
In the beginning, her inlet showed a strong sugar syrup taste, rich in sour acid.
Then there released salty taste from the tongue side.
Afterward, three tastes: sweet, sour and salty were intersected. Her taste felt three-dimensional and profound.
Furthermore, mouth was first filled with solid cooked grain taste: like slight yellow lobster sauce, fried bamboo shoots beans, salty rice crust, and soy sauce rice crackers.
Not long, tea incense sprang up. It smelled like fermented heavy Chinese tea, which smelled like oolong tea.
The tea sweet incense called out the essence of sweet potato. It felt like charcoal baked sweet potatoes with peel. The earthy smell of the potato crust and the baking taste of the coals felt so vivid.
Finally, for a long time, all but came to the edge of aftertaste, I arrived in the flower garden full of bees.
Tian En owns high percentage of ester; therefore, the oral tactile feels more smooth and oily.
But Tian En seems to be longer. Until the end period, her starch taste turns gradually clear.
Impression and Additional Remarks
Something about Tian Zhi 9
Tian Zhi 9 acts as a various-faced mysterious Ninja owning illusion
Her aroma before decanting must be the clearest fragrance and the most tender sweet potato wine that the author has ever met. (maybe even the purest liquor of their items!)
Especially, the aroma of the preceding period creates a static space-time inspiration.
Afterward though it shows a variety of aromas, in sum, her overall feeling before sober is pure.
Her nectar is so tactful, her acid is so restrained, and even her smell of melon is like a shy girl!
She resembles either an empty valley orchid or a recluse.
After decanting, however, it tells another story.
Her taste contrast is much stronger.
Her vivid taste, her impact of aroma, and her tasting slick of touch
All predicts that she is anything but a guy easy to control or to guess!
The Comparison among Four Kind of Alcohol
Tian Zhi 9 and other three kinds of sweet potato wine produced in March 2017 such as Huan Ji 30, Huan Ji 60 and Huan Ji 50
originated from the same brewing source, that is, the tin of sweet potato and the organic rice of Tian En.
There are two common aromas and taste characteristics can be found among these four kinds of spirits
One is the overall fresh style; the other is the starch taste.
Yet the difference between the four types is huge in addition to alcohol concentration (and oil ester).
First, Huan Ji 30 shows the most intuitive "archetype" of all aroma features. By drinking from this drink, you can understand the other styles better.
Secondly, Huan Ji 50 tastes fully sweet smelling, rich in fruit stain odor, and good at suave taste.
Third, Huan Ji 66 tastes fragrance of honey in all. No matter about aroma or about taste, she includes aroma of light honey, nectar, longyan honey. You can say it is the story of honey incense.

Here you can get the cleanest, the most ethereal, and possibly the most complex and most impacted experience. It depends on how much time you spend on her.
